

We have grown up with noodles. They are in every Asian kitchen due to their versatility and easiness to cook. This is one of the first dishes that I learned from Mum and have now passed it on to the kids.
Ingredients |

Rice bran / vegetable oil (as needed) |
soy sauce |
250 - 300 grams of chicken mince | pepper |
3 eggs - whisked | fish sauce |
1 packet of asian noodles - hokkien, egg or rice noodles (prepare as per packet instructions) | 4-5 garlic cloves, sliced thinly |
2 cups of veggies - you can use broccoli, carrots (julienne), cabbage, bok choy or whatever you want to use |
Method |
1. Heat wok with oil and cook chicken mince. You can add soy sauce and pepper now if you wish. Remove from wok & set aside. 2. Add little oil to pan & stir fry whisked eggs. Remove and set aside. 3. Add garlic to pan & stir fry with the vegetables for two minutes or until the vegetables are starting to soften up. 4. Then add the noodles along with soy sauce, fish sauce & pepper. 5. Give it a good stir then add to wok with your chicken & eggs. 6. Stir all the ingredients until everything is well combined. Add more soy sauce, fish sauce & pepper to your liking. 7. Serve and enjoy. |
